This recipe for Orzotto - or Orzo Risotto - is super creamy and made with baby spinach and cherry tomatoes. As a one pot dish you only need one pan. That makes this orzo recipe particularly easy. Our Orzotto comes as a vegetarian one pot pasta and tastes great both for lunch and as a quick dinner.

We got to know Orzo relatively late and only looked at each other from a distance for a long time. Since so many different and, above all, delicious dishes can be prepared with orzo, we have now tried it out and turned it into an incredibly creamy one-pot dish for you. The preparation is a little reminiscent of that of risotto like oursPumpkin risotto, which is why we find the name Orzotto more than appropriate (it is made up of orzo and risotto). Since currentlyTomato seasonis, we use sweet co*cktail tomatoes and a little baby spinach for our orzotto. They go perfectly with the sauce and give it additional attractive red and green “dotts” of color. We like this type of one pot pasta recipe best when it's really creamy. Therefore, a little crème fraîche is added after cooking.

What exactly is Orzo?

Orzois also known by the somewhat confusing name “noodle rice”. Orzo has little to do with rice, but is a type of pasta. At first glance, their appearance is reminiscent of grains of rice that are too large. Orzo is made from durum wheat semolina or soft wheat semolina. The name "Orzo" comes from Italian and means "barley", which indicates the similar shape. By the way, there are other names for Orzo tooReasonorKritharaki. That is the Greek name. We have noticed that orzo is more commonly sold in supermarkets under the name Kritharaki. This is important if you're looking for him and can't find Orzo at first. Alternatively, ask about Kritharaki.

How does orzo taste?

Orzo definitely tastes like pasta. Its mouthfeel is pleasantly nubby and compact. Thanks to its small shape, Orzo mixes perfectly with sauces. That's why the sauce comes into its own in our recipe when combined with orzo.

What should I pay attention to when preparing Kritharaki or Orzo?

This Kritharaki pan or our Orzo recipe is very easy to prepare. The practical thing is that you don't need several pans or pots, but you can cook all the ingredients in one pan. To ensure that your orzo recipe turns out perfectly, we have a few tips for you:

Should the orzo be sautéed like rice for risotto?

That's exactly how it is. As with risotto, we first add onions, tomato paste, spices and garlic to the pan. Then comes the dry orzo. We fry this gently for 2 - 3 minutes. Only then is the liquid added.

How long should Kritharaki cook?

You can roughly follow the information on the package. This is usually 15 - 17 minutes. However, for our Orzo or Kritharaki pan, we have found that the cooking time is extended by around 10 minutes. This is probably because the pasta doesn't boil in water, but rather simmers gently in the sauce. As with pasta or rice, it is important that you try every now and then to see whether the pasta is al dente.

When are the tomatoes and baby spinach added to the orzo?

When your orzo is almost cooked, we add the tomatoes. This way they can simmer a little longer, cook and become soft. At the very end comes the baby spinach. He collapses immediately. Once that has happened, we add crème fraîche and your Kritharaki recipe is ready.

What is the relationship to water in kritharaki?

Most packages indicate a ratio of 1:10. This means that 1 liter of water is recommended for 100g of Orzo. However, this applies in the event that the pasta is boiled in the water until bubbling and the liquid is not completely absorbed. In our Kritharaki recipe, the liquid should be completely absorbed. Therefore, for 150g of orzo we need around 700ml of vegetable stock (if necessary a little more). It is also important that you stir the orzo regularly.

Is orzo gluten free?

No, orzo is not gluten free. Orzo is made from durum or soft wheat semolina, and wheat contains the protein gluten.

Should I wash the orzo beforehand?

What else can you cook with orzo?

Orzo is super versatile. You can cook it straight according to the instructions on the package and serve it as a side dish to a dish like rice or other pasta. Alternatively, you can prepare orzo like in our one pot recipe but choose a different sauce - e.g. a Bolognese sauce. Orzo also tastes great cold as a salad or is a delicious addition to soups.

What alternatives are there to orzo if you don't have it on hand?

Orzo is not always easy to find. In such cases - as I said - definitely look out for Kritharaki or Risoni. If you still have no luck, you can also substitute orzo in this one pot recipe. We recommend the following options:

  1. Small pasta: If the exact shape isn't important in your recipe, you could simply use smaller types of pasta that you have on hand, such as: E.g. soup noodles, mini penne or small shell pasta.

  2. Pearl barley or pearl barley: These grains are made from barley, but have a comparable cooking behavior.

  3. Rice: If you replace orzo with rice in this one pot dish, you actually end up with a risotto. So nothing is easier than that. Of course, the taste of rice cannot be compared to orzo. The recipe would still taste very tasty.

Ingredients

  • 1 small Zwiebel⁠
  • 1 Knoblauchzehe⁠
  • 1 EL Olivenöl⁠
  • 2 stalks of thyme⁠
  • 1 TL Honig⁠
  • 1 THE Tomatenmark⁠
  • 2 The price Zimt⁠
  • 150g Orzo⁠
  • 700ml vegetable broth⁠, a little more if necessary⁠
  • 200g Kirschtomaten⁠
  • 50g Baby Spinat⁠

  1. Remove the skin from the onion and garlic. Dice the onion very finely. Heat oil in a pan. Allow the onion cubes to become translucent. Then add thyme, honey, tomato paste and cinnamon. Press in the garlic. Fry everything gently for 3 minutes. ⁠
  2. Add orzo. Fry for 2 - 3 minutes, stirring occasionally. Deglaze with broth and simmer for 25 minutes with the lid closed. Stir again and again. The orzo may need a little more broth. ⁠
  3. Wash tomatoes and baby spinach. Halve the tomatoes and add them during the last 10 minutes. After this time the orzo should be al dente. Now stir in the baby spinach for the last 3 minutes. Finally stir in the crème fraîche. Serve fresh and sprinkle with Parmesan if desired. ⁠
